When we talk about chicken at Emmer & Co.®, we don't mean that bland breast on your sandwich, or the unadventurous option that's on every restaurant menu. The chicken Americans consume today—now four times as much as we did in 1950—isn't true chicken at all.

Turn up the heat.

There are a million ways to cook a chicken, and we know you have your favorites. When you're cooking a heritage bird, we recommend using high heat to seal-in the juices and get crispy skin. Heritage chickens have less fat than industry birds, so broiling or cooking them on high temperatures keeps them from drying out.


Whole life. Whole bird. Whole meals.

Just as we think about the bird's whole life as we raise chickens, we also think about appreciating the whole bird as we cook. Each Emmer & Co. chicken can be made into at least three substantial meals. Roast a chicken for the main course, then make sandwiches with leftovers the next day. Simmer the bones with herbs and vegetables for a nutrient-packed broth.

We find fulfillment in fully appreciating the animal's sacrifice. By using the whole bird and never wasting, we honor food scarcity times of the past, those currently in need, and the provision it takes to sustain life.
