Just as we think about the bird's whole life as we raise chickens, we also think about appreciating the whole bird as we cook. Each Emmer & Co. chicken can be made into at least three substantial meals. Use these recipes as inspiration to make the most of your 100% pasture raised slow-growth bird.

Day 1 | Roast your bird.

Chef Thomas Keller is culinary royalty. Although his restaurants The French Laundry and Per Se serve dizzyingly intricate recipes, Keller is quick to say that a simple roast chicken is one of his favorite dishes. He gives some great tips in this video on how to dry-roast a bird. Give it a shot and cook your chicken like a master - it's way easier than you'd expect.
Day 2 | Rock the leftovers.

Use your leftover roast chicken to create a second (equally comforting) hearty dinner. This decadent recipe ditches canned soup; the healthier, homemade alternative is just as simple to make. Pull the extra meat off your bird's wings and carcass, add it to your leftovers, and you'll have plenty of meat for this casserole.
